After more than a century of history and 22 years under the stewardship of David Martin, the two-Michelin-starred La Paix begins a new chapter at Corinthia Brussels from 15 September 2026. Bringing its contemporary cuisine and enduring spirit to Brussels' Most Fabulous Address, La Paix continues its legacy of excellence, craftsmanship and warm hospitality in a remarkable new setting.

This summer, an exclusive ice cream collaboration by chocolatier Pierre Marcolini and Chef David Martin arrives at Palm Court and The Courtyard. Discover four signature flavours, each crafted as a sophisticated expression of summer indulgence.
Choose your flavour:
- Chocolate Cookie Lover (vegan) - a tribute to indulgence, layering Chocolate Grand Cru São Tomé Príncipe ice cream with chocolate cookies, chocolate sauce and softly whipped cream
- Exotic Dream (vegan) - a luminous composition of mango-yuzu sorbet, blancmange, fruit powder, a fine brunoise of fresh fruits and a delicate vanilla-mint oil
- Tutti Frutti - a generous scoop of Vanilla Grand Cru ice cream, finished with coulis in every colour of the rainbow
- Red Matcha - an elegant interplay of matcha ice cream, puffed rice, raspberry caramel, pink meringue and fresh raspberries
