An invitation for discovery and connection

David Martin brings to Palais Royal a culinary vision shaped by decades of experience, international influences and an instinctive understanding of flavour. With this new chapter, he passes on his knowledge to Chef Jean Kaczmarek.

Together the kitchen becomes their atelier, where dishes are expressive yet harmonious and modern yet grounded in exceptional ingredients. 

With a Michelin Guide recommendation and a 15.5/20 score from Gault&Millau, Palais Royal reflects Martin’s distinctive vision: a gastronomic journey defined by his travels, harmony between old techniques and the pleasure of discovery.

 

 

A unique dining experience

A masterpiece of craftsmanship and culinary heritage, the Presse à Canard experience at Palais Royal is an elegant tribute to tradition. Delicate fish soup is pressed and prepared tableside, transforming technique into theatre. The journey begins with caviar and coquillages, concluding with a refined dessert. Only available by reservation.

Discover four refined private dining rooms offering fully privatised experiences for 6 to 30 guests. Set within the heritage salons of the Grand Hotel Astoria, these intimate spaces blend historic charm with contemporary sophistication.

Temporary closure

Palais Royal will be closed from Monday 27 April to Tuesday 5 May 2026 inclusive. Our last dinner service before the break will be on Saturday 25 April.
