Named after the Latin viridis, meaning “green”, the restaurant draws inspiration from Rome’s secret gardens, fertile countryside and the quiet rhythm of nature woven through the Eternal City.

Meet Carlo Cracco

One of Italy’s most celebrated contemporary chefs, Carlo Cracco is renowned for his refined interpretation of Italian cuisine and his unwavering dedication to quality ingredients. After training under some of gastronomy’s most influential figures - including Gualtiero Marchesi and Alain Ducasse - he went on to establish an international reputation through his acclaimed restaurants in Milan and Portofino.

Cracco’s culinary philosophy is grounded in authenticity, simplicity and a deep respect for Italian culinary heritage. Beyond the kitchen, he has become a prominent voice in modern gastronomy through television projects including Dinner Club, where he explores Italy’s diverse food traditions, landscapes and local cultures.

At Viride, Cracco brings his vision to Rome for the first time in partnership with Corinthia, creating a dining destination that reflects both the city’s timeless elegance and the evolving spirit of Italian cuisine.
