Creating an exceptional dining experience meant partnering with Malta's leading house in wines and spirits, Charles Grech. Wine expert, Alberto Bafumi, has selected wines that will be paired with each dish. The wines come from Mount Etna's eastern slopes, from the panoramic Murgo Winery. Natural techniques and methods are used in this winery to lower the impact on the environment. As a result, the harvested grapes are succulent, earthy and flavoursome.
To truly accomplish a locally conscious dinner, we made sure to source our produce from Bint L-Irjieh, who grows and sells local pesticide-free fruits and vegetables. Bint L-Iriejh relies on a special kind of sulphur, a natural alternative to pesticides that offers reassurance to consumers that their farming delivers only the freshest, most delicious and environmentally-friendly produce.
