Meet Memely, Rickshaw Restaurant Manager
If you have dined at Rickshaw, then you may well have met Memely – our lovely restaurant manager. Here she shares her story, as well as her recommendations for your meal at Rickshaw.
"My journey with Rickshaw actually starts in Khartourm, in the Sudan, in 2005, where the Corinthia also runs a hotel, Memely says. “I saw the Corinthia and dreamed of working there in the food and beverage department and, finally in 2008, I joined the company as a waitress and member of the banqueting team. It was hard work polishing hundreds of plates and pieces of cutlery, but it gave me the technical skills I needed to move up through the ranks. Within two years I had achieved my goal of becoming head waitress in one of the outlets there, the Rickshaw!”
Next, Memely hoped to move to Europe and, in 2012, that dream also came true. “I was lucky enough to meet the Corinthia Palace Hotel & Spa’s-then deputy general manager Jean Pierre Mifsud when he was visiting Khartoum. He saw my dedication to the company and invited me to Malta, to work as restaurant supervisor. It was a huge opportunity for me to acquire a vast array of knowledge with regards to service, different types of cuisine, wine and spirit knowledge, as well as to develop personally. Thanks to Mr Mifsud, and the trust of our general manager at the time Mr Woodward, my Rickshaw dream continued.”
Today Memely loves her job as much as when she first joined, if not more. She cites all sorts of wonderful experiences among her six years at Rickshaw in Malta, including serving top local and international celebrities (such as Ronan Keating and the band Air Supply), and even meeting Her Majesty the Queen. “I am very honoured to have received a token of appreciation from the Master of the Royal Household of Buckingham Palace after the CHOGM meeting in Malta in 2015. It is my most treasured possession,” Memely says.
Meanwhile, she also enjoyed travelling to Corinthia Rickshaws in other parts of the world – such as Rickshaw Prague and Rickshaw Budapest – on training exercises, but always looks forward to returning to her team here. “We are like a family,” she smiles. “We love working together to provide a memorable Asian experiences for our guests. They are our kings and queens.”
Finally, Memely makes her own recommendations for the dishes you could try at Rickshaw, as well as the perfect drinks pairing to really complete your meal. “The Gulai Kambing (Indonesian lamb curry) is delicious – tender lamb meat flavoured with ginger, Asian spices, herbs and creamy coconut milk. It reminds me of the beauty of traditional south east Asian cuisine. I recommend pairing that with our Red Dragon cocktail because it features my favourite flavour – lychee!”
